Method
1) Rinse the corn and place it in a heavy saucepan or stockpot. Remove the outer skin of the pineapple and place the skin in the stockpot. Add the cinnamon and water to the pan. Bring to the boil and then simmer, slightly covered, for 1 hour.
2) Meanwhile, cut the pineapple flesh into small dice and reserve. After the simmering period, remove the pan from the heat and strain the liquid into a bowl; you should have about 1 litre.
3) Add the sugar to the liquid and stir to dissolve. Allow to cool then add the wine, brandy and diced pineapple. Refrigerate overnight and serve over ice.
