Method

1) Preheat the oven to 180C/Gas 4. Butter two medium sheet tins, or two 20cm)round cake tins.

2) Sift the flour and salt together in a bowl. In an electric stand mixer, combine the butter and granulated sugar at medium speed. Add the vanilla and then the eggs, 1 at a time, then the cocoa powder.

3) Reduce the mixer speed to low. Stream in half the buttermilk, then slowly add half the flour mixture, then the rest of the buttermilk and the remaining flour.

4) In a separate bowl, mix the vinegar and bicarbonate of soda, and then mix into the batter. Add the red food colouring and combine well. Once thoroughly mixed, divide the batter evenly between the cake tins.

5) Bake for 30 to 35 minutes, or until a cocktail stick inserted in the centre comes out clean. Remove from the oven and allow to cool in the tins. Slice, as desired, and serve.
