Tom Kerridge's Cauliflower Cheese with Butter Beans and Mozzarella
This recipe takes cauliflower cheese to another level, using a few additional ingredients to make it extra special for Christmas Day.

Step 1
Preheat oven to 180C fan.
Step 2
Place the cauliflower florets onto a baking tray and drizzle with one tablespoon of olive oil. Sprinkle over 1 tsp of the curry powder and season with salt. Mix well with your hands until evenly coated then roast in the oven for 25 minutes or until the cauliflower begins to brown. Meanwhile, add the shallots and cauliflower leaves to a separate baking tray and drizzle with the remaining olive oil. Season with salt and pepper and roast in the oven alongside the florets for the last 15 minutes or until the shallots have softened.
Step 3
To make the sauce, add the butter to a medium saucepan and melt over a medium heat until it begins to brown. Add the flour and stir well with a wooden spoon for one minute to make a roux. Swap the spoon for a whisk, and slowly add the milk to the pan, whisking constantly, and continue to cook for 2-3 minutes until the sauce thickens and becomes smooth. Add the mustard, the remaining ½ tsp of curry powder, nutmeg, and mix through half of the cheddar cheese and all the creme fraiche. Stir over the heat until the cheese has melted, and then remove from the heat and season.
Step 4
Remove both trays of vegetables from the oven.
Step 5
Place the roasted cauliflower florets in a large ovenproof dish, then add the shallots and cauliflower leaves and mix gently to combine. Sprinkle the butter beans on top. Break up the mozzarella into small chunks and push these in amongst the veg, then pour over the cheesy sauce. Mix the breadcrumbs with the remaining cheddar cheese and sprinkle over to create the final layer.
Step 6
Place on the middle shelf in the oven and bake for 15-20 minutes, with the grill function turned on, until the sauce is bubbling, the cheese has melted, and the top is golden brown.
Step 7
If you don’t have a grill/fan function on your oven, bake for 15 minutes and then finish under the grill for the final five minutes.
