Method
- In a medium sauce pot, bring sugar, water, ginger and chilli pepper (if using) up to a simmer.
- Remove from heat and cool to room temperature. Strain out ginger and chilli pepper and chill until ready to serve.
- Immediately before serving, stir sparkling water or club soda into syrup and serve over ice, garnished with a slice of lime.
