Method

Heat a large frying pan over a high heat. Add the butter and allow to melt, then add the pears, rosemary and lemon peel. Allow the pears to caramelize before turning them over and splashing in the Marsala wine. Add the honey and bring it up to a bubble and cook for 2 minutes until syrupy.

Serve with Gorgonzola cheese and crusty bread.
