Method

1) In a bowl sift the flour, baking powder and salt. Stir in the sugar.

2) Add the eggs, oil and milk and stir until mixed. Do not beat the mixture

3) Heat a griddle or heavy based frying pan and brush lightly with oil. With a small ladle, spoon approximately 55-175ml of batter for each pancake onto the griddle. Then, add 25g of huckleberries to each pancake. Cook pancakes for 2-3 minutes on each side.<

4) Divide the pancakes between 4 large plates and serve with extra huckleberries, butter and warm maple syrup.
