1. Use a mortar and pestle to pound chillies and garlic to a rough paste.
2. Heat oil in a wok over high heat. Add the chilli garlic paste and onion and stir-fry for about two minutes. Add pork mince, fish sauce and sugar. Stir-fry until pork is just cooked. Stir through oyster sauce and holy basil.
3. Ladle onto a plate and top with a fried egg.
