Pork chops with orange soy glaze and udon noodles

Method
1) Heat the oil in a large frying pan over a medium-high heat. Season both sides of the pork chops with salt and black pepper. Add the pork to the pan and cook 2 minutes per side, until golden brown.
2) In a medium bowl and using a spoon, combine the orange marmalade, stock, soy sauce and sesame oil. Mix well and add to the pork in the pan. Bring to a simmer for 5 minutes, or until the pork is cooked through and sauce thickens and reduces.
Arrange the noodles on a serving platter. Top with the pork chops and sauce. Garnish with spring onions just before serving.
