Method

1. In a large bowl, place the red cabbage, brussels sprouts, radish and cucumbers and mix well. 
2. In a food processor, blend the dressing ingredients together until smooth.
3. Pour over the salad and toss well. 
4. Top with feta and sprinkle with toasted pumpkin seeds. 
5. Finish with freshly cracked pink peppercorns.
