Method

Bring water to just below a simmer in a large saucepot and add tea, lemon zest, lemon juice and ginger, and let gently simmer 1 minute.

Add sugar and honey and return to a simmer.

Add pears and cover surface of liquid with parchment paper (to keep liquid flowing gently over pears – otherwise they will float) and cook until pears for 5 minutes.

Remove pot from heat, but keep pears in liquid to cool. Chill pears in syrup until ready to serve.

Pears can be served on their own, with ice cream (or yogurt for breakfast), or syrup can be reduced to a glaze and served with the pears.
