Method

Place sugar, syrup, water and spices into a medium saucepan. Warm over a medium heat and stir until the sugar dissolves. Remove from the heat and add butter, stirring until the butter has melted completely. Remove to a large bowl and allow to cool while you assemble the dry ingredients.

Sieve flour into a large bowl. Add bicarb, baking powder and salt and stir to combine. Add the flour into the syrup and butter mixture and stir until it comes together to form a dough. Place the dough in the fridge for two hours (you can leave it overnight).

Preheat the oven to 180 degrees. Divide the dough into two or four (depending on the size of your floured surface) and roll out the dough to a thickness of about 1cm. Cut the dough into your desired shape, and bake in the pre-heated oven for 10 minutes, until they have turned golden brown. Allow to cool and ice however you wish. Have some fun!
