1) Over a heated, medium-low griddle, toast the croissants for 1 minute. Remove from the griddle and divide the marshmallows and chocolate onto each croissant.
2) Sprinkle with coarse salt and place the top slice of the croissant back to make a sandwich. Place the croissants back on the griddle. Close the griddle cover allowing the chocolate and marshmallow to melt, about 30 to 45 seconds.
3) Remove the croissants from the grill and serve warm.
