Method

1) Place the candy canes in a plastic bag and hammer into 0.5cm chunks or smaller.

2) Melt the chocolate in a double boiler or in a glass bowl over a pan of hot water.

3) Combine the candy cane chunks with the chocolate (add the peppermint flavouring at this point if desired). Pour the mixture onto a baking sheet layered with greaseproof or waxed paper and place in the refrigerator for 45 mins or until firm.
