Method

1) In the bottom of a slow cooker, combine the pork, onion, green pepper, jalapeno, garlic, chilli powder, cumin, salt and pepper. Stir to combine.

2) Add the stock, tomatoes and beans, cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.

3) When ready to serve, ladle the soup into bowls and top with the avocado and coriander. Garnish the soup with lime wedges. Serve with cornbread, if desired.
