Ingredients
Method
2) Heat the oil in a large skillet over medium-high heat. Sprinkle the chicken pieces with 1 1/2 tsp. salt and 1/2 tsp. pepper and cook until lightly browned, about 2 minutes on each side. Transfer the chicken to a plate and reserve.
3) Add the sausage to the skillet and cook until browned, about 2 minutes. (Reduce the heat as needed to keep the skillet from burning.) Toss in the mushrooms and cook along with the sausage, stirring until softened, about 2 minutes. Add the peppers and stir in the flour. Cook for 1 minute, stir in the vinegar, stock and tomato sauce and bring to a simmer, scraping the bottom of the pan to deglaze. Season with 1/2 tsp salt and a pinch of pepper.
4) Return the sauteed chicken pieces to the skillet along with any juices that have accumulated on the plate. Cover the skillet and simmer gently, until the chicken is just cooked through, 30 to 35 minutes. Transfer the cooked chicken to a warm serving platter. Return the skillet to the heat and reduce the liquid until it thickens to a sauce consistency, about 1 to 2 minutes. Taste and adjust the seasoning. Spoon the sauce, mushrooms, peppers and sausage over the chicken. Sprinkle with the chopped parsley, and serve immediately.
Our pollo scarpariello is an Italian‑American favourite with real personality.
A dish which is both homely and indulgent, this chicken scarpariello recipe has the flair of New York’s Little Italy baked in. The name “scarpariello” translates to “shoemaker’s chicken,” and legend has it the dish was originally thrown together by shoemakers using whatever was on hand.
This Italian-American staple mixes chicken with spicy-sweet fennel sausage, sweet peppers and mushrooms, while the star of the show is the scarpariello sauce made from red wine vinegar, chicken stock, and rich tomato.
Serve your chicken scarpariello with creamy mashed potatoes or over linguine, fettuccine or tagliatelle for a dish that’s perfect for a weeknight family dinner. If you’re looking for a tasty twist, swap the fennel sausage for chorizo, or add a few olives for a southern Italian edge.
This incredible chicken scarpariello recipe brings Little Italy to your dinner table, and if you fancy more Italian chicken dishes, how about a classic chicken Milanese with tomato and fennel sauce, rigatoni with chicken thighs, or a traditional one-pot chicken and gnocchi soup.
