Tom Kerridge's Salsa Verde
This salsa is a vivid green – so fresh and full of flavour. It’s packed with herbs and the anchovy is the secret ingredient to give it depth and seasoning.

Method
Put the olive oil and all the herbs into a medium mixing bowl and stir well. Add the remaining ingredients to the bowl and stir again. Season to taste and transfer the salsa verde to a serving bowl.
Tom's Tip:
As soon as you have chopped the herbs, mix them with the oil immediately to stop them discolouring.
