The Ultimate 10-Course No-Cook Summer Tasting Menu

When the mercury rises and even making a sandwich feels like a commitment, it’s time to rethink breakfast, lunch and dinner! Enter the no-cook tasting menu - ten (almost) heat-free dishes that keep things cool without compromising on flavour. From crisp, chilled bites to refreshing sweet finishes, these dishes are all about smart assembly and peak summer produce when sweltering ovens and stoves definitely aren’t on the menu. Minimal effort, maximum impact - because in this heat, the less you cook, the better you eat.

Note: you may have to toast some bread or boil a kettle, but apart from that…

Cucumber Gazpacho with Watermelon & Mint

Sweet, hydrating watermelon and crisp cucumber take centre stage in this refreshing no-cook Spanish-style gazpacho. Just blitz the ingredients until they’re smooth, stir in creamy Greek yoghurt to make it thick and rich, and then chill for an hour or two in the fridge to let the mint and gingery zing do its thing. Serve it cold with crunchy pumpkin seeds and crumbled feta. It’s the ultimate cool-down starter - hydrating, vibrant and ready with zero stove time.

Acai Breakfast Bowl

Fresh, fruity and fabulous, this acai breakfast bowl is a sensational start to a summer's day. It’s a creamy, sorbet-like blend of frozen acai, banana and berries, blitzed together until it’s dreamily thick, and topped with the crunch of granola, the juicy pop of pomegranate seeds, the nutty taste of coconut flakes, and a drizzle of sweet honey. Acai, by the way, is a dark purple berry from South America, but if you can’t find it, you can use frozen blueberries, mixed summer fruits or even dragon fruit.

Minty Greek Salad

This minty Greek salad is a bright, breezy bowl of summer classics - crisp cucumber, juicy tomatoes, briny olives and creamy feta, all brought to life with a good handful of fresh mint. A simple dressing made from olive oil and lemon juice keeps everything zingy, and it’s the kind of no-fuss side that feels equally at home on a picnic blanket or a lazy al fresco lunch.

Tuna & Avocado on Toast with Crunchy Slaw & Five-Spice Oranges

This one brings a little extra personality to the no-cook table - creamy avocado and flaky tuna with a crunchy slaw and a bright hit of five-spice oranges give you that unmistakable sweet-savoury combo. The recipe calls for toasted whole wheat bread, but you can switch it up with a sourdough or a seeded rye (yes, you’ll need to employ the services of a toaster), but this open-faced sandwich is hipster café meets lazy Sunday brunch with flair.

Peanut Butter No-Bake Cheesecake

Rich, creamy and gloriously fuss-free, this no-bake peanut butter cheesecake is pure dessert comfort without the oven drama. It’s the kind of pud that feels a little decadent but still wonderfully easy to pull together - exactly the sort of sweet sensation you want when the temperature is climbing. Hilariously, the recipe says ‘if there’s any leftover frosting…’ Yeah, right!

Vietnamese Fresh Prawn Summer Rolls

Everyone loves the unmistakable crunch of a deep-fried spring roll, but these Vietnamese fresh prawn summer rolls are all about crisp, cool contrast - juicy prawns, crunchy vegetables, and plenty of fresh herbs, all wrapped up in delicate rice paper (which you’ll have to soak in warm water, but that’s hardly classed as cooking…). They look elegant, taste bright and need almost no time at all, which makes them summer entertaining gold. For added zing, serve them with our punchy fiery herby Vietnamese dipping sauce.

Pear & Pistachio Guacamole

This pear and pistachio guacamole gives the classic dip a tasty little makeover, with sweet ripe pear and the nutty crunch of pistachio nuts giving this great guac a fresh, juicy twist. Chuck in the zing of lime juice, the exotic punch of coriander and the fiery hit of jalapenos and you’ve got a dip that’s familiar enough to feel comforting, but unexpected enough to make guests look twice - perfect for scooping, sharing and summer grazing.

Parma Ham, Strawberry, Mozzarella & Walnut Summer Salad with Kiwi-Lime Vinaigrette

This spectacular salad is all about that sweet-salty summer sweet spot - juicy strawberries, creamy mozzarella and buttery walnuts give you freshness, richness and crunch in every forkful. A kiwi-lime vinaigrette keeps things zippy and bright, while paper-thin slices of Parma ham adds that savoury edge that makes the whole plate feel a little more special. It’s quick to make, effortlessly elegant and exactly the sort of salad that belongs on a no-cook hot-day menu.

No-Churn Chocolate Ice Cream

This no-churn chocolate ice cream is the kind of dessert that makes the heat wave feel almost worth it. Rich cocoa and cream come together into a silky, frozen treat that’s indulgent without any churning or faff, then it simply needs a good long freeze to set. It’s smooth, chocolatey and wonderfully low-effort - perfect for scooping into bowls when you want something cold, comforting and properly satisfying. And don’t forget the hundreds-and-thousands!

Veggie Lover’s Club Sandwich

This veggie lover’s club sandwich is a proper stacked-up summer lunch, loaded with layers of crisp veg, creamy avocado and smoky tofu for plenty of flavour and texture. There’s no bacon or deli meat needed here - just fresh, vibrant ingredients that make each bite feel hearty without ever tipping into heavy. It’s colourful, satisfying and ideal when you want something quick, cool and a little more interesting than your average sandwich.
