1) Warm the olive oil in a medium saucepan and then add the rice and onion. Stir until rice is well coated and translucent around edges, about 2 minutes.
2) Add the water and salt. Stir, then cover, reduce the heat to low and cook for 20 minutes.
3) Remove from the heat and allow to rest, covered, for 5 minutes. Fluff the rice then hen gently mix in the remaining ingredients.
