Salad of green mango with prawn and lobster tail and lime-chilli dressing

Method
1) For the dressing, mix all ingredients in a blender and place in bowl.
2) Toss mangoes with the dressing.
3) To finish the dish, place mango salad in the centre of chilled plates. Top each with half a lobster tail, two prawns and snow peas. Finish with coriander and fried leeks.
Serve.
