Vietnamese Crab Salad

Steam the crab and remove the crabmeat.
Peel the pomelo - extracting the segments as intact as you can - and separate into small 2cm pieces.
Combine all ingredients except cilantro and peanuts. Toss gently in a mixing bowl.
Serve lightly chilled with coriander and fried shallots if desired.
