If we tried to list all the ground beef hacks we’ve heard over the years, we’d be chatting until the cows come home. Some are brilliant (like adding a sprinkle of baking soda for tenderness), while others are ill-advised (please don’t rinse the browned beef)!
Over the years, we’ve discovered that you rarely need to overcomplicate things. Start with the best beef you can afford, stick to a reliable recipe, and you have a recipe for dinner success.
That said, we may have just stumbled upon our favourite ground beef trick yet. It requires zero extra ingredients, tools or time, comes courtesy of a professional chef, and actually pays off in the finished product.

Why You Should Use a Whisk to Brown Ground Beef
Blink and you might miss this trick. Luckily, Caroline Anderson always has our full attention when she posts on her popular TikTok, @caroline.i.anderson. We’re especially fans of Anderson’s "Scaled Down" series, where the Baltimore-based chef and recipe developer walks us through how to recreate the dishes she dreams up for her meal prep company, Scratch Made, in family-friendly portions.
While demonstrating her Greek moussaka, Anderson adds olive oil, ground beef, and diced onions to a Dutch oven, then reveals the secret: “Use a whisk to break up the meat as it cooks. I like this so much better than those plastic tools for this,” she continues, tipping her cap to those meat choppers with pinwheel blades.
Of course, we finished watching Anderson’s demo - and proceeded to add moussaka to our meal plans next week - then immediately reached out to the chef to learn more.
“In the past, I've largely depended on breaking up the raw beef before adding it to the pan and then attempting to break it up further using a flat wooden spoon. But, this never got the super minced ragú-like texture that I was looking for,” Anderson tells Food Network.
Other cooks and recipe developers recommend swapping in a metal potato masher for this reason. However, Anderson relies on something that’s even more common: a simple wire whisk.
“Someone once left a comment on one of my videos telling me that their Greek mum used a whisk to break up ground beef and I thought, ‘that's genius!’ Especially at work when I'm cooking many, many pounds of ground beef at once, it can be really challenging to break it up and using the whisk method works like a charm,” the 11-year food industry veteran says.
Simply position the whisk 90 degrees from the pan’s surface, and press down and lift up to quickly and easily break up the ground beef into small crumbles.

The Best Ways to Use a Whisk (That You May Not Have Tried Already)
Easy to use, easy to clean, and effective at the task at hand, we look forward to whipping out our whisks to kick off all of our future ground beef, pork, chicken, and turkey creations. Before Anderson headed back to her kitchen to dream up her next menu, we couldn’t resist asking if there are any other tricks we could try with our whisks.
“I use a whisk a lot while cooking, mostly because I don't like to have super-niche or specific cooking tools. I think it adds to unnecessary kitchen clutter,” Anderson says. “That's probably why I've never owned one of those tools specifically for breaking up ground meat.”
The chef advocates for keeping this multitasker handy…
- To make rustic mashed potatoes
- To mix chunk-free roux to thicken sauces, gravies, soups, stews, and gumbos
- So you can skip sifting flour or powdered sugar - simply use a whisk to break up clumps before mixing with the wet ingredients
- To mount butter into pan sauces like beurre blanc or lemon-caper sauce
Happy whisking!
