Method
1) Preheat the oven to 180°C / gas mark 4. In a mixer with a paddle attachment, add the sugar and the butter. Mix until light and fluffy. Add the egg, vanilla and almond essences and mix to incorporate.
2) Sift together the baking powder and the flour. Add the flour mixture to the butter mixture and mix until combined.
3) Roll out the pastry on a floured worktop. Using a biscuit cutter, press out shapes onto un-greased baking sheets.
4) Bake the biscuits for 5 to 8 minutes, or until firm, but not yet browning.
