Bring the apple juice to a simmer in a medium saucepan over medium heat. Toss the Gruyere and cornstarch in a medium bowl. Add to the simmering juice by the scant handful, whisking constantly until smooth and letting the sauce come to a boil between additions, about 30 seconds. Remove the saucepan from the heat, stir in the Parmesan and mustard and season with 1/2 teaspoon salt and a few grinds of pepper. Pour into a serving bowl, and serve with the dippers of your choice.

Go on, get your dip on with this classic cheese fondue recipe!

If you love melt-in-the-mouth magic, this brilliantly basic fondue recipe is here to bring the house down! Start by stirring freshly squeezed apple juice into a fondue pot (wine’s classic, but apple juice brings a fruity, zingy, tangy twist). Next, add grated Gruyere cheese and a dash of cornstarch for silky smoothness. Then comes a heap of nutty Parmesan, a spoonful of Dijon mustard, plus salt and pepper to taste, and stir together until you get a bubbling pot of pure cheesy happiness.

Swiss by origin (with a little French flair), fondue has humble beginnings - farmers melted cheese with a splash of wine to make stale bread and leftovers a whole lot tastier through the winter months. Fast-forward to today, and this cheese fondue recipe has become an iconic communal dish perfect for dinner parties or cosy evenings in.

But the real fun is the dippers! From rustic baguette chunks, crisp apple wedges, and baby new potatoes, to crunchy broccoli florets, pretzel crisps or tortilla chips, almost anything goes. Go classic with bread, or mix it up with salami cubes, gherkins and more. Feel free to get creative with your combos!

When it comes to cheese, we’ve used Gruyere and Parmesan, but can you use any other cheeses for cheese fondue? 

Of course you can! Mild, creamy and super-melty, Emmenthal is a Swiss favourite, while Comté and Beaufort (French Alpine cheeses) add a rich, nutty flavour. Raclette will make your cheese fondue recipe smooth and slightly tangy, while for further variety, try Appenzeller or Fontina for a buttery taste. If you’re feeling bold, sprinkle in some aged Cheddar or creamy blue cheese. It’s hard to go wrong when there’s cheese involved!
