Apple brown betty

5 large golden apples (about 900g), peeled and thinly sliced
240ml apple cider
45g brown sugar, divided
1 tsp vanilla essence
1 tsp ground cinnamon, divided
30g butter, divided
3 slices wholemeal bread (30g each) crusts included (to make bread crumbs)
25g chopped walnuts
1) Preheat the oven to 180°C/ gas mark 4.

2) Combine apples, apple cider, 15g brown sugar, vanilla, half a teaspoon of cinnamon in a large saucepan over medium-high heat. Cook, stirring occasionally, until apples are tender but not mushy, about 10 mins.

3) Stir in 15g butter until melted, remove from heat and transfer apple mixture to a 23cm glass pie plate.

4) Place bread in food processor and process until crumbs are formed, about 15 secs.

5) Melt remaining 15g butter in microwave for 20 secs. Toss crumbs with melted butter, walnuts, remaining 30g brown sugar and remaining half a teaspoon of cinnamon. Scatter crumb mixture on top of apples and bake for 30 mins, until topping is crisped and lightly browned.
