Black-eyed pea salad

180ml oil
50g granulated sugar
60ml balsamic vinegar
1 (425g) tin black-eyed peas, drained, rinsed
1 green pepper, diced
1 red pepper, diced
50g diced spring onions
1 large tomato, diced
15g freshly chopped parsley leaves
10g mixed freshly chopped thyme and oregano leaves
1) In a small bowl, whisk together the oil, sugar and vinegar.

2) In a large bowl mix together the salad ingredients. Pour the dressing on top of salad, mix well and serve.
