Apple cinnamon oatmeal casserole

For the apple cinnamon oatmeal casserole

475ml single cream or milk
55g brown sugar
15g butter
1/2 tsp salt
80g quick-cooking oats
2 tbsp ground cinnamon
125g peeled chopped apple
65g chopped dried apricots
25g chopped pecans
80g sultanas
20g dried cherries
Cinnamon oat nut topping, recipe follows

For the cinnamon oat nut topping

55g brown sugar
1 tbsp ground cinnamon
15g chopped pecans
15g oats
Butter, to dot the top
For the apple cinnamon oatmeal casserole:

1) Preheat the oven to 180C/Gas 4. Grease a medium casserole dish.

2) Combine the single cream or milk, brown sugar, butter and salt in a heavy saucepan over medium heat. Simmer until the butter is melted and the mixture is smooth. Remove from heat. Add the oats to a casserole dish and stir in the milk mixture, cinnamon, apples, apricots, pecans, sultanas and cherries. * Cook's Note: If the casserole seems dry, add milk to moisten.

3) Top with cinnamon oat nut topping and dot with butter. Bake for 20 to 30 mins. Remove from the oven and serve.

For the cinnamon oat nut topping:

1) Combine all ingredients in a small bowl until well combined.
