Curried cashews

30g unsalted butter
4 tsp Madras curry powder
1 tsp sea salt
1/4 tsp cayenne pepper
200g roasted salted cashew nuts
1) Preheat the oven to 180C/Gas 4.

2) Melt the butter in a small frying pan. Add the curry powder, salt, and cayenne and cook, stirring constantly, for about 30 seconds until aromatic.

3) Toss the cashews with the curry butter on a baking sheet, spread the nuts in a single layer.

4) Bake until the nuts are hot and shiny, about 10 minutes.

5) Cool to room temperature and serve.
