Griddled tilapia with peach BBQ sauce

175 ml tomato ketchup
45 ml prepared mustard
125 ml oil
125 ml apple cider vinegar
Pinch garlic salt
45 ml Worcestershire sauce
2 tsps paprika
60 ml lemon juice
1 tsp black pepper
3 tbsps muscovado sugar
175 ml water
50g onions, finely chopped
500g canned or fresh (peeled and pitted) peaches
4 tilapia fillets (200g each)
House seasoning
1 lime, juiced
1) Mix all the ingredients together in a saucepan, excluding the peaches and fish and simmer over medium heat for 15 to 20 minutes.

2) While the sauce is simmering, puree the canned or fresh peaches. Once the sauce is cooked, add the pureed peaches to the sauce and stir together. Preheat the griddle to medium heat and brush with oil.

3) Season the tilapia with house seasoning. Cook the fish on each side for 3 to 4 minutes. During the last few minutes of cooking, brush the fish with some barbecue sauce.

4) Once cooked and plated, ladle a nice spoonful of the peach barbecue sauce on top of the fillets.
