Homemade Hot Chocolate 3 Ways

For the base:
3 cups cold milk
1/2 cup icing sugar
1/4 cup unsweetened cocoa
1/2 teaspoon cornflour
1/4 teaspoon pure vanilla extract
Salt
For tropical hot chocolate:
1 tablespoon rum
Whipped cream, for garnish
Toasted coconut, for garnish
For smoky hot chocolate:
1 tablespoon Scotch, such as Johnny Walker Black
Toasted marshmallows, for garnish
Smoked salt, for garnish
For peppermint hot chocolate:
1 tablespoon peppermint schnapps
Whipped cream, for garnish
Peppermint stick, for garnish
1. For the base: Whisk together the milk, sugar, cocoa, cornflour, vanilla and a pinch of salt in a medium saucepan. Cook over medium-high heat, whisking constantly, until the mixture boils, about 2 minutes. Reduce the heat to medium, and continue whisking until thickened, about 30 seconds more.
2. Mix in add-ins as desired, and serve immediately.
