1) Cut the pineapple into bite size wedges or slices.

2) Put the salt, cayenne pepper, mint, coriander, and limes into small bowls. Squeeze a bit of lime juice onto the fruit.

3) Lightly dip the pineapple into a little salt and as much cayenne as you like and finish with the mint and coriander.

Cook's Note: For true Southeast Asian taste add a little bowl of fish sauce to your options of dippers.
