Trucker special sandwich with roasted sirloin

For the roasted sirloin

680g to 1kg sirloin of beef
1 carrot, peeled and sliced
1 stalk celery
1 onion, diced
Salt
Pepper
Garlic, to taste
Pinch oregano

For the trucker special sandwich

30g butter
4 slices sourdough bread
2 slices Swiss cheese
Roasted sirloin:
1) Place the sirloin in a roasting tin and add all the other ingredients. Add 125ml water to the tin and cover. Bake at 180C/Gas 4 for 1 1/2 hours (reduce the time for rarer meat).

2) Uncover and brown for about 30 minutes more. Take the meat out of the oven and let it rest for about 15 minutes before slicing. The stock may be saved for soups and brown gravies.

Trucker special sandwich:
1) Spread the butter on 1 side of each slice of bread. In a frying pan over a medium heat, place 2 slices of the bread butter-side down and place the Swiss cheese on the bread. Place slices of meat on each side on top of the cheese.

2) Place the green chilli and bacon on top of the meat and the other 2 slices of bread on top, butter side up. Brown both sides of the bread until golden, remove from the pan, cut in half, and serve.
