Method

1) Dredge the chicken breasts in flour seasoned with house seasoning, then dip in beaten egg seasoned with hot sauce to taste, then dredge in a mixture of breadcrumbs, Greek seasoning and Parmesan.

2) Heat the olive oil in a frying pan over a medium-high heat and brown the chicken pieces on each side.

3) Transfer the fried chicken to a baking tray. Top each piece with with one slice of ham, 1 teaspoon of chopped parsley and one slice of mozzarella cheese.

4) Place chicken in the oven for 8 minutes, just until cheese melts and starts to get bubbly. Serve hot.

House seasoning:
Mix the ingredients together and store in an airtight container for up to 6 months.
